Head chef Joshua Mason earned his stripes in San Francisco, where he worked at the three-Michelin-starred Atelier Crenn, before heading back to shape up the dining scene in regional NSW. Take your appetite because the tasting menu is packed with protein - snapper, Murray cod, duck and lamb backstrap all make an appearance.
